This is a fun and awesomely (is that a word? It is now!) healthy drink. I accidentally created this recipe while trying to figure out what to do with all the whey I get when I make indian-style cheese.
It's so refreshing, it's unbelievable!! Whey, to me, has a bit of a coconutty (another word? It is now!) after-taste because of all the minerals present. It is so healthy you wouldn't believe me if I told you the positive effects of drinking fresh why.
Here's how you make it!
1 Liter of Whole Milk (or 1/4th of a Gallon for us Americans)
1 Cup of Lemon Juice
1 16.9 oz serving of Coconut Water (available here: http://amzn.to/2oOTcc1 )
A cheesecloth and a strainer
If you want to watch these steps in action, these first few steps are the same (but with more lemon juice) as those in this video:
WATCH HOW TO MAKE PANEER AT HOME
Bring the milk to a boil.
Before it overflows, turn down the heat to a simmer.
Add lemon juice while stirring at the same time. You will see it separate into curds and whey.
Let it cool. Then strain through the cheesecloth into a pitcher.
The Curds leftover in the cheese cloth can be eaten right away or pressed into Paneer - a super healthy and silky awesome tasting indian cheese.

This drink is an excellent source of riboflavin, calcium, phosphorous, thiamin, B12, pantothenic acid, zinc, potassium, magnesium and selenium. And it tastes amazing!
